Pesto with a basil alternative was something that I needed as I absolutely love basil pesto but sourcing organic basil is difficult and expensive.
So here is a basil alternative.
Since moving into a DHA (Defence House), I just haven’t had the desire to plant too much garden as the restrictions on what we can and can’t do are so limiting.
This is why I don’t get to make it as often as I’d like, however, a fellow colleague talked about this awesome way of creating basil pesto (without having basil leaves) and my ears pricked up.
Also, a great way to add the greens into the kid’s diet, my toddler loves it with carrot sticks.
So I gave it a go and it’s AMAZING!
How to make basil pesto (alternative)
Just need:
- Two handfuls of greens (kale, broccoli stalks, spinach)
- 1/2 cup cashews
- 1 clove garlic
- 8 cubes of parmesan cheese (or dairy free/vegan option)
- Lemon juice (optional)
- Good couple of dollops of olive oil and add more if dry
- 5 drops doTERRA basil oil (the basil alternative)
- Salt and pepper to taste
Pulse in food processor until even but still chunky.
Serve with carrot sticks and Enjoy!!!
